Instructions

  1. Warm the Milk and Vanilla: In a small saucepan over medium low heat, whisk together the whole milk and vanilla extract until the mixture begins to simmer. Remove the saucepan from heat to prevent boiling.
  2. Beat the Eggs and Sugar: In a large bowl, use an electric mixer to beat the eggs, egg yolks, granulated sugar, and a pinch of salt for about 5 minutes until the mixture thickens and becomes slightly frothy.
  3. Temper the Eggs: Slowly pour the warmed milk and vanilla mixture into the egg mixture while whisking constantly to gradually raise the temperature of the eggs and avoid curdling.
  4. Cook the Custard: Pour the combined mixture back into the saucepan and return to medium low heat. Stir constantly and cook for about 5 minutes, or until the custard reaches 165°F (74°C), thickening slightly.
  5. Add Cream and Nutmeg: Remove the pan from heat and stir in the heavy cream and nutmeg thoroughly. For a smoother texture, optionally strain the mixture through a fine mesh sieve to remove any lumps.
