Ingredients

Batter Ingredients

  • 1/4 cup canola oil
  • 1/4 cup softened butter
  • 1 cup granulated sugar
  • 2 eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk or 1/2 cup milk + 1/2 teaspoon white vinegar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon molasses

Coating

  • 1/2 cup melted butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat and Prep Pan: Preheat your oven to 350 degrees Fahrenheit. Grease a light-colored loaf pan thoroughly with non-stick cooking spray and set it aside to prevent sticking.
  2. Make the Base Batter: In a large bowl, combine canola oil, softened butter, and granulated sugar. Mix well until smooth. Add eggs and vanilla extract, stirring until fully incorporated. Gradually add the dry ingredients—flour, baking powder, and salt—alternating with the buttermilk. Stir until the batter is uniform and smooth, scraping the bowl sides to avoid lumps.
  3. Prepare Cinnamon Batter: Portion out 1/2 cup of the prepared batter into a smaller bowl. Add cinnamon and molasses to this portion and mix until evenly combined, creating the cinnamon swirl batter.
  4. Layer and Swirl the Batters: Pour half of the plain batter into the bottom of the prepared loaf pan. Spoon dollops of half the cinnamon batter over the plain batter. Pour the remaining plain batter on top, then drop the rest of the cinnamon batter in dollops. Use a butter knife to gently swirl the two batters together, creating a marbled effect.
  5. Bake the Bread: Place the loaf pan in the oven and bake for 45-50 minutes. The bread is done when a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.
  6. Prepare Cinnamon-Sugar Coating: While the bread bakes, pour the melted butter into a large shallow dish. In a separate shallow dish, combine granulated sugar, brown sugar, and ground cinnamon to create the cinnamon-sugar mixture.
  7. Cool and Remove Loaf: Once baking is complete, allow the loaf to cool in the pan for about 10 minutes. Loosen the edges with a knife and carefully remove the loaf from the pan while it is warm but not hot enough to handle comfortably.
  8. Coat the Loaf: Dip each side of the warm loaf into the melted butter, ensuring it is fully coated. Spoon any remaining melted butter over the edges for extra crispiness. Immediately transfer the buttered loaf to the cinnamon-sugar mixture and press gently to coat all sides thoroughly.
  9. Slice and Serve: Slice the coated loaf into pieces and serve warm or at room temperature. Enjoy your delicious cinnamon swirl donut bread!

Notes

  • Substitute buttermilk with milk plus vinegar if needed to create a similar tangy effect.
  • Use a light-colored loaf pan to monitor browning and prevent overcooking the bread edges.
  • Ensure eggs are at room temperature for better batter consistency and rise.
  • The swirling step creates the signature donut bread look and flavorful cinnamon ribbons.
  • Coating immediately after baking while the bread is warm helps the cinnamon sugar stick well and creates a crunchy crust.
  • Store leftovers wrapped tightly at room temperature for up to 2 days or freeze slices for longer storage.
