These no-bake Cinnamon Roll Energy Bites are a quick and easy snack perfect for satisfying your sweet tooth while providing a boost of energy. Made with almond butter, maple syrup, vanilla protein powder, and rolled oats, they offer a delicious blend of cinnamon and white chocolate flavors without any baking required.

Ingredients

Base Ingredients

  • 1 cup natural creamy almond butter
  • ⅓ cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt (adjust based on almond butter salt content)
  • 1 ½ teaspoons cinnamon

Topping

  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Combine Ingredients: Add the almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon to a mixing bowl. Use a rubber spatula to mix everything together thoroughly until a thick batter forms.
  2. Shape the Bites: Line a baking sheet with wax paper. Using a 1.5 tablespoon mini cookie scoop, drop rounded balls of the batter onto the prepared baking sheet. Then, roll each ball with your hands to smooth out the edges.
  3. Melt the Chocolate: Place the white chocolate chips and coconut oil in a microwave-safe bowl. Heat in 10-15 second increments in the microwave, stirring after each interval until fully melted and smooth. Take care not to burn the chocolate.
  4. Drizzle Chocolate: Drizzle the melted white chocolate evenly over the tops of the energy bites on the baking sheet.
  5. Chill to Set: Place the baking sheet in the refrigerator for 1 hour, or until the energy bites harden and the chocolate topping sets.
  6. Store Properly: Transfer the energy bites to an airtight container. Store in the refrigerator for up to 5-7 days or freeze for 2-3 months to maintain freshness.

Notes

  • Almond Butter: Use natural almond butter without added sweeteners. Ingredients should include only almonds, oil, and salt.
  • Adjusting Salt: If your almond butter already contains salt, reduce added salt in the recipe to ¼ teaspoon or to taste.
  • Storage: Keep leftover energy bites in an airtight container refrigerated for up to a week or frozen for longer storage up to 3 months.
