Ingredients

Chocolate Coating

  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the base: Line a baking sheet with wax paper or a silicone baking mat to prevent sticking and make removal easier.
  2. Mix yogurt and peanut butter: In a small bowl, combine the plain Greek yogurt, creamy peanut butter, maple syrup or honey, and vanilla extract. Stir until the mixture is smooth and well blended.
  3. Form the bars: Using a cupcake or ice cream scoop, dollop about half of the yogurt mixture into 4-6 mounds on the lined pan. Press a popsicle stick into each mound, then top these with the remaining yogurt mixture. Use a small offset spatula to slightly flatten the mounds.
  4. Add peanuts and freeze: Evenly scatter roasted and salted peanuts over each mound if using. Place the pan in the freezer for at least 2 hours or until the bars are frozen solid.
  5. Melt the chocolate coating: In a microwave-safe bowl, combine chocolate chips or chopped chocolate and coconut oil. Microwave at 50% power for 30 seconds, then stir. Continue microwaving in 15-20 second intervals, stirring after each until fully melted and smooth.
  6. Dip and coat the bars: Remove the frozen yogurt bars from the freezer and quickly dip each bar into the melted chocolate, covering them completely. Place the coated bars back on the lined pan.
  7. Serve or store: Enjoy immediately for a firmer texture or return to the freezer to set fully. Let thaw 5-10 minutes before eating to soften slightly for easier biting.
