Ingredients

Yogurt Base

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter

Chocolate Coating

  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the Pan: Line a baking sheet with wax paper or a silicone baking mat to prevent the yogurt bars from sticking during freezing.
  2. Mix the Yogurt Base: In a small bowl, combine 1 cup plain Greek yogurt, ½ cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract. Stir the ingredients until the mixture is smooth and evenly blended.
  3. Form the Yogurt Mounds: Using a cupcake or ice cream scoop, place about half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound to form the base. Then, scoop the remaining yogurt mixture onto the mounds, layering to cover the sticks. Use a small offset spatula to slightly flatten the tops for even bars.
  4. Add Peanuts and Freeze: Evenly scatter 2 tablespoons of roasted and salted peanuts on top of each yogurt mound for added texture and flavor. Place the baking sheet in the freezer for at least 2 hours, or until the bars are frozen solid.
  5. Melt the Chocolate Coating: Once the yogurt bars are frozen, place 1 cup chocolate chips or chopped chocolate and 2 tablespoons coconut oil in a microwave-safe bowl.
