This rich and decadent Chocolate Fudge Frosting is made with just four main ingredients, cooked on the stovetop without the need for a mixer or melted chocolate. It boasts a deeply chocolatey flavor that is not too sweet, thanks to the balance of cocoa powder and powdered sugar. The frosting becomes thick, glossy, and spreadable after chilling, making it perfect for cakes, cupcakes, or other desserts.

Ingredients

Frosting Ingredients

  • 3 cups unsalted butter (6 sticks or 675g)
  • 1 1/3 cups whole milk (320g)
  • 3 cups powdered sugar (360g)
  • 1 cup cocoa powder (100g), preferably Dutch processed
  • 1 tsp instant coffee (optional, but recommended)
  • ½ tsp salt (optional, but recommended)

Instructions

  1. Combine Ingredients in Saucepan: Add all the ingredients to a large saucepan or deep frying pan and place it on the stove over medium to medium-low heat.
  2. Melt Butter and Mix: Cook while stirring occasionally until the butter has melted. The mixture might look lumpy at first, but keep stirring and cooking until it transforms into a smooth chocolatey sauce. Taste at this stage and adjust sweetness or cocoa intensity if desired.
  3. Bring to a Boil: Continue cooking and stirring until the mixture comes to a boil. The mixture will bubble up, become frothy, and increase in volume as it thickens.
  4. Thicken the Frosting: After a few more minutes of stirring and cooking (around 10-15 minutes total), the bubbling will stop and the mixture will become thick, glossy, and similar in consistency to thick chocolate syrup like Hershey’s.
  5. Transfer and Cover: Pour the hot frosting into a wide dish such as a 9×13 pan. It will still be runny at this point. Press cling wrap directly onto the surface to prevent skin formation and lumps.
  6. Chill Until Spreadable: Refrigerate the frosting for 1-2 hours, or until it firms up and becomes easily spreadable on your cakes or desserts.

Notes

  • Using Dutch-processed cocoa powder gives a richer, smoother chocolate flavor.
  • Instant coffee enhances the chocolate taste but can be omitted if desired.
  • Pressing cling wrap onto the surface prevents a skin from forming, ensuring smooth frosting texture.
  • Adjust sugar or cocoa powder amounts to balance sweetness and chocolate intensity to your preference.
  • The frosting can be stored in the refrigerator for up to 3 days; bring it to room temperature and stir before using.
