Ingredients

Watermelon

  • 450 g Watermelon, 1″ thick round, cut into triangles

Chocolate Coating

  • 70 g Dark chocolate (vegan)

Toppings

  • 1 tablespoon Desiccated coconut
  • 1 tablespoon Walnuts, crushed
  • 1 tablespoon Cashews, crushed

Instructions

  1. Prepare the watermelon: Slice the watermelon into 2.5cm (1 inch) thick rounds. Then cut each round into eight wedges to create bite-sized pieces perfect for dipping.
  2. Melt the chocolate: Gently melt the dark chocolate using a double boiler or microwave in short bursts, stirring frequently until smooth and silky without burning.
  3. Dip the watermelon wedges: Dip the tips of each watermelon wedge into the melted chocolate, allowing excess chocolate to drip off before placing them on a lined baking tray.
  4. Add toppings and chill: Sprinkle desiccated coconut, crushed walnuts, and cashews over the chocolate-coated tips. Refrigerate the tray for about one hour or until the chocolate has fully set.

Notes

  • To make melting the dark chocolate easier, add a small amount of coconut oil to the pan while melting.
  • Instead of wedges, you can cube the watermelon for bite-sized pieces that are easy to dip and eat.
