Ingredients

Cheese Ball Base

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon vanilla extract
  • 1/3 cup powdered sugar
  • 1/3 cup plus 1 tablespoon crushed graham cracker crumbs
  • 1/2 cup mini chocolate chips

Coating

  • 1/3 cup mini chocolate chips
  • 1/3 cup finely chopped pecans

Instructions

  1. Mix Cream Cheese, Butter & Vanilla: Beat the softened cream cheese, unsalted butter, and vanilla extract together in a mixing bowl until the mixture is light and fluffy, ensuring an even texture.
  2. Add Sugar & Graham Cracker Crumbs: Incorporate the powdered sugar and 1/3 cup crushed graham cracker crumbs into the cream cheese mixture and beat well until fully combined.
  3. Fold in Mini Chocolate Chips: Gently fold in 1/2 cup of mini chocolate chips to evenly distribute them throughout the mixture without overmixing.
  4. Chill the Mixture: Cover the bowl and chill the cheese ball mixture in the refrigerator for at least 2 hours or overnight, allowing it to firm up and flavors to meld.
  5. Form the Cheese Ball: Using a rubber spatula and lightly greased hands (sprayed with cooking spray), shape the mixture into a smooth ball.
  6. Coat the Cheese Ball: Mix 1/3 cup mini chocolate chips with 1/3 cup finely chopped pecans in a shallow bowl and roll the cheese ball in this mixture to coat all sides evenly.
  7. Store Properly: Cover the coated cheese ball and refrigerate until ready to serve, keeping it chilled to maintain shape.
  8. Serve with Dippers: Present the chocolate chip cheese ball with nilla wafers, graham crackers, or any cookies of your choice for dipping and enjoying.

Notes

  • For easier shaping, chill the mixture well so it is firm but not too hard.
  • You can substitute pecans with walnuts or almonds based on preference or allergies.
  • If desired, add a splash of bourbon or rum for an adult twist in the cheese ball base.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • This is a no-bake recipe, making it perfect for quick and easy party preparations.
