Ingredients

Fruits

  • 3 large apples of choice, washed and dried completely

Chocolate Coating

  • 2 cups dark chocolate chips or chunks
  • 1 Tbsp unrefined coconut oil

Toppings

  • 1/2 cup raw pecans, roughly chopped
  • 1/3 cup dried cranberries or raisins

  • 1012 wooden popsicle sticks

Instructions

  1. Melt Chocolate: Add the coconut oil to the chocolate chips in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring thoroughly after each until the mixture is fully melted and smooth. Alternatively, melt chocolate over a double boiler on the stove while stirring continuously. Transfer melted chocolate to a shallow plate suitable for dipping.
  2. Prepare Toppings & Workspace: Roughly chop pecans and set aside along with dried cranberries. Arrange wooden popsicle sticks nearby. Line a large baking sheet with parchment paper and set it aside for placing dipped apple slices.
  3. Slice Apples: Using a sharp chef’s knife or a mandolin, carefully slice apples into 1/2 inch thick slices. Remove any seeds present in each slice to ensure smooth consumption.
  4. Insert Popsicle Sticks: With a paring knife, make a small slit at the bottom of each apple slice. Insert a wooden popsicle stick into each slit gently to avoid breaking the apple slice.
  5. Dip Apple Slices: Dip each apple slice fully into the melted chocolate, coating both sides evenly. Allow excess chocolate to drip off before placing slices onto the prepared baking sheet.
  6. Add Toppings: Immediately sprinkle the coated apple slices with chopped pecans and dried cranberries while the chocolate is still wet to adhere properly.
  7. Set Chocolate: Refrigerate the tray for at least 15 minutes or until the chocolate coating has fully set and hardened.
