Chilaquiles Verdes is a traditional Mexican breakfast dish featuring crispy baked tortilla triangles smothered in tangy tomatillo salsa verde, topped with crumbly queso fresco and creamy Mexican crema. This quick and satisfying recipe takes only 30 minutes to prepare and serves four, making it an excellent choice for a flavorful, comforting morning meal or brunch.

Ingredients

Tortillas and Salsas

  • 12 corn tortillas, cut into triangles
  • 3 tablespoons avocado or vegetable oil (for baking the tortillas)
  • 2 cups homemade or store-bought tomatillo salsa verde

Toppings

  • ⅓ cup queso fresco or cotija cheese, crumbled
  • ½ cup Mexican crema or cilantro lime Rancho crema
  • 2 to 4 eggs (optional, for serving)

Instructions

  1. Preheat Oven: Heat your oven to 350°F (175°C) to prepare for baking the tortillas.
  2. Prepare Tortilla Triangles: Brush the tortilla triangles with olive oil (about 2 tablespoons or as needed) and arrange them in a single layer on a cookie sheet. Sprinkle with kosher salt for seasoning.
  3. Bake Tortillas: Place the cookie sheet in the preheated oven and bake the tortillas for 12 to 15 minutes or until they turn slightly brown and become crispy. Remove from oven and set aside.
  4. Heat Salsa Verde: While the tortillas bake, pour 2 cups of salsa verde into a medium pan over medium heat. Simmer gently until the salsa is hot and fragrant.
  5. Combine Salsa and Tortillas: Add the crispy baked tortilla chips into the pan with the hot salsa verde. Gently fold the chips to coat all the pieces evenly with the salsa.
  6. Serve Immediately: Transfer the salsa-coated tortilla chips onto serving plates immediately to preserve some crispiness.
  7. Add Toppings: Sprinkle crumbled queso fresco over the chilaquiles and drizzle with Mexican crema or cilantro lime Rancho crema to add creaminess and flavor.
  8. Optional Egg and Beans: Serve with fried eggs on top and a side of refried beans for a complete breakfast experience.

Notes

  • Brushing the tortillas with oil and baking them instead of frying creates a healthier, lighter alternative while still maintaining crispiness.
  • Use fresh homemade salsa verde for the best flavor, but good quality store-bought salsa works well too.
  • The number of eggs to serve with chilaquiles can be adjusted based on preference or appetite.
  • To keep chilaquiles crispy, serve immediately after combining the tortillas with salsa.
  • Queso fresco can be substituted with cotija or feta cheese if desired.
