Ingredients

Cheese and Flour Mixture

  • 1 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup blanched almond flour

Seasonings & Liquids

  • 2 large eggs
  • 1 tbsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 tsp sea salt (or 1/2 tsp for less salt)
  • 1/4 tsp black pepper
  • 2 tbsp olive oil, divided (1 tbsp + 2 tbsp, plus more if needed)

Main Ingredient

  • 2 lb ground chicken

Instructions

  1. Prepare the mixture: In a large bowl, combine shredded mozzarella, grated parmesan, blanched almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, black pepper, and 1 tablespoon olive oil. Stir well to evenly mix all ingredients.
  2. Add chicken and mix: Add the ground chicken to the cheese and seasoning mixture. Mix gently just until combined, careful not to over-mix so the patties remain tender.
  3. Form patties: Divide the mixture into 16 small patties, approximately 3/8 inch thick each. Place the patties on a parchment paper-lined cutting board and cut the parchment into squares around each patty. This technique helps to lift and flip the patties easily.
  4. Heat the skillet: Warm 2 tablespoons of olive oil in a large nonstick skillet over medium heat for about 2 minutes until shimmering.
  5. Cook patties: Arrange a single layer of patties in the hot skillet, using the parchment paper to transfer and flip them by inverting the pan and peeling off the paper quickly. Fry each side for 3-4 minutes until golden brown and fully cooked inside.
  6. Repeat cooking: Add the remaining patties to the skillet in batches, using the last tablespoon of olive oil if needed, and cook as before until all patties are cooked through.
  7. Rest and serve: Allow the cooked patties to rest for 5-10 minutes before serving to allow juices to redistribute for maximum juiciness.

Notes

  • Do not over-mix the chicken mixture to keep the patties tender and juicy.
  • Adjust salt to taste; use less if preferred.
  • If patties stick to the pan, add a little more olive oil or use a nonstick skillet.
  • Resting the patties helps retain moisture and improves texture.
  • Can be served with a side salad, in a bun, or with dipping sauces of choice.
