This Cheesy Garlic Bread recipe is a deliciously easy appetizer or side dish featuring crusty French bread slathered in a garlic butter mixture, baked to perfection with a generous topping of mozzarella and parmesan cheeses. Finished with fresh parsley, it’s perfect for serving warm at family dinners or parties.

Ingredients

Bread

  • 1 (14 oz) loaf French bread (or Italian bread)

Garlic Butter Mixture

  • 1/4 cup salted butter, softened
  • 2 Tbsp olive oil
  • 2 tsp minced garlic (or 1 tsp granulated garlic)
  • Salt and freshly ground black pepper, to taste

Cheese

  • 1 1/4 cups shredded mozzarella cheese
  • 1/3 cup finely shredded parmesan cheese

Garnish

  • 1 Tbsp finely chopped fresh parsley

Instructions

  1. Preheat Oven and Prepare Bread: Preheat your oven to 400°F (200°C). Slice the loaf lengthwise, through the height of the bread, to create two halves. Lay two 24-inch sheets of foil side by side with a slight overlap on a rimmed cookie sheet. Place the cut side of the bread facing up on the baking sheet.
  2. Make Garlic Butter Mixture and Apply: In a mixing bowl, combine softened butter, olive oil, minced garlic, salt, and freshly ground black pepper. Stir until well blended. Spread this mixture evenly over the entire surface of both bread halves, making sure to coat the edges to prevent burning. Wrap the bread tightly with the overlapping foil, crimping the edges and rolling the ends to seal. Bake for 10 minutes to warm and infuse the flavors.
  3. Add Cheese and Continue Baking: Carefully remove the bread from the oven and unwrap the foil enough to expose the bread but keep it loosely covered. Sprinkle the shredded mozzarella and parmesan evenly over both halves. Return the bread to the oven uncovered and bake for an additional 5-6 minutes. For a crisper texture and golden-cheese topping, broil for the last 1-2 minutes—but watch closely to prevent burning. No need to adjust the oven rack during broiling.
  4. Garnish and Serve: Remove the bread from the oven and sprinkle the finely chopped fresh parsley evenly over the top. Slice the bread into portions and serve warm for the best taste and texture.

Notes

  • Using a crusty French or Italian loaf ensures the bread holds up well under the toppings and baking.
  • Adjust garlic quantity based on preference; granulated garlic can be substituted but minced garlic offers fresher flavor.
  • Baking wrapped in foil for the first step keeps the bread moist before crisping under the broiler.
  • Keep a close eye during broiling to avoid burning the cheese.
  • For extra flavor, add a sprinkle of Italian seasoning or red pepper flakes before the cheese step.
