  • 1/2 cup finely diced onion
  • 2 cups cheddar cheese, divided
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt
  • 1/2 – 1 teaspoon black pepper, depending on taste
  • 1 cup sour cream or 8 ounces softened cream cheese

Instructions

  1. Combine Ingredients: In a large bowl, mix the frozen diced potatoes, finely diced onion, 1 cup of cheddar cheese, cream of chicken soup, garlic powder, kosher salt, black pepper, and sour cream or softened cream cheese until all ingredients are well combined.
  2. Prepare Slow Cooker: Spray the insert of a 4-6 quart slow cooker with non-stick cooking spray to prevent sticking and ensure easy cleanup.
  3. Cook Potatoes: Pour the combined potato mixture into the slow cooker insert, spreading it evenly. Cover with the lid and cook on high for 3 hours or on low for 6 hours. Check the potatoes to make sure they are tender before proceeding.
  4. Add Remaining Cheese: Fifteen minutes before the end of cooking, sprinkle the remaining 1 cup of cheddar cheese evenly over the top of the potatoes. Cover again and cook for the final 15 minutes, allowing the cheese to melt thoroughly.
