Cheesy Beef Pockets are a delicious and satisfying dish featuring flour tortillas stuffed with seasoned ground beef, bell pepper, and onions, topped with garlic butter and a melty blend of provolone, mozzarella, and cheddar cheeses. Perfect as an appetizer, dinner, or main course, these pockets bring warm, comforting flavors with an easy oven bake.

Ingredients

Meat Filling

  • 1 pound lean ground beef
  • 1 red bell pepper, diced (optional)
  • ½ cup diced yellow onion
  • ½ cup water
  • 3 Tablespoons tomato paste
  • 1 ounce packet taco seasoning
  • 2 garlic cloves, minced

Garlic Butter

  • 3 Tablespoons butter, melted (salted or unsalted)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried parsley

Assembly

  • 3 (8-inch) flour tortillas
  • 1 cup shredded provolone and mozzarella cheese blend
  • ¼ cup shredded cheddar cheese

Instructions

  1. Cook the Filling: In a large skillet, add 1 pound of lean ground beef, diced red bell pepper, and diced yellow onion. Brown and crumble the ground beef, cooking until fully done. Drain any excess grease to keep the filling less greasy.
  2. Add Seasonings: To the skillet, add ½ cup water, 3 tablespoons tomato paste, 1 ounce taco seasoning packet, and 2 minced garlic cloves. Stir and cook for 3 to 4 minutes until the liquid reduces and the mixture thickens. Remove the skillet from heat.
  3. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (204°C). In a small bowl, combine melted butter, garlic powder, and dried parsley. Use some of this garlic butter to grease the bottom of a 9-inch round baking dish, reserving the remainder for later.
  4. Prepare Tortillas: Cut each of the 3 flour tortillas in half so you have 6 pieces. Divide the beef mixture on the skillet into 6 equal portions. Place one portion onto each tortilla half and add about ⅛ cup of the provolone and mozzarella cheese blend on top of the filling.
  5. Form Pockets: Fold each tortilla half into a triangle shape, sealing the edges over the filling, and place seam-side down in the prepared baking dish.
  6. Brush with Garlic Butter and Add Cheese: Brush the tops of the folded tortillas with the remaining garlic butter using a pastry brush. Sprinkle the ¼ cup shredded cheddar cheese evenly over the top.
  7. Bake: Bake in the preheated oven for 15 to 20 minutes or until the edges are golden brown and the cheese is melted and bubbly. Oven times may vary, so watch for doneness rather than relying solely on the clock.
  8. Optional Garnish: Sprinkle additional dried parsley on top before serving for extra color and flavor.
