A fun and easy no-bake appetizer inspired by pumpkin pie, featuring cheddar cheese and crackers creatively assembled to resemble mini pumpkin pies topped with a dollop of whipped cream cheese.

Ingredients

Cheese

  • 1 (8 oz) block Cheddar Cheese

Crackers

  • 12 Triscuit Thin Crisps
  • 12 Ritz Toasted Chips

Other

  • Whipped Cream Cheese (amount as desired for piping and assembling)

Instructions

  1. Slice Cheese: Slice the cheddar cheese block in half lengthwise, then cut each half alternately to form triangles approximately the same size as the Triscuit crackers.
  2. Assemble Cheese on Triscuits: Place one cheese triangle on top of each Triscuit Thin Crisp, creating the ‘pie’ base.
  3. Prepare Cream Cheese Piping Bag: Transfer desired amount of whipped cream cheese into a Ziplock bag and cut a small corner off to use as a piping bag.
  4. Prepare Ritz Chips: Break each toasted Ritz chip in half, leaving enough of one half intact so it stands taller than the back of the assembled ‘pie’.
  5. Glue Ritz Chips: Using whipped cream cheese as ‘glue,’ attach the broken pieces of Ritz chips to create the pie’s ‘sides’ standing upright as pictured.
  6. Top with Whipped Cream Cheese: Add a small dollop of whipped cream cheese on top of the cheese triangle to mimic the look of whipped cream topping.
