  • 1 1/2 cup Mashed Banana (about 4 large ripe bananas, peeled and mashed)
  • 1/3 cup Coconut Sugar (or regular sugar)
  • 1/3 cup Melted Coconut Oil
  • 1 teaspoon Vanilla Extract

  • 1 1/2 cup All-Purpose Flour (or white spelt flour)
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda

  • 1 cup Shredded Carrot

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (180°C). Line a 9-inch by 5-inch loaf pan with parchment paper, then lightly grease the paper and pan with coconut oil to prevent sticking. Set aside.
  2. Mash Bananas: Peel and mash the ripe bananas thoroughly using a fork on a flat surface until smooth. Measure out 1 1/2 cups of the mashed bananas as required for the recipe.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas with coconut sugar, melted coconut oil, and vanilla extract. Stir until the mixture is well combined.
  4. Add Dry Ingredients: Gradually stir in the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix just until incorporated to avoid overworking the batter, which can make the bread gummy.
  5. Incorporate Carrots and Walnuts: Gently fold in the shredded carrots and chopped walnuts, ensuring they are evenly distributed without overmixing the batter.
