A refreshing Blueberry Peach Feta Salad featuring juicy fresh blueberries, sweet peaches, crisp cucumbers, and tangy feta cheese, all tossed in a vibrant basil-lemon vinaigrette. Perfect for a light lunch or summer side dish, combining fresh fruit and savory flavors with a hint of honey and Dijon mustard.

Ingredients

Salad Ingredients

  • 1 Pint Blueberries (Fresh)
  • 2 Peaches (chopped into 1/2 inch pieces)
  • 1 Medium English Cucumber (Cut into 1/2 moons)
  • Basil Leaves (optional garnish)
  • Crumbled Feta Cheese, about 1/2 cup

Vinaigrette Dressing

  • 3 Tablespoons Olive Oil
  • 1½ Tablespoons Lemon Juice (from fresh lemon)
  • 1 Tablespoon Honey
  • 1 Teaspoon Dijon Mustard
  • 2 Tablespoons Basil (finely chopped)
  • Salt and Pepper to taste

Instructions

  1. Prepare the Vinaigrette: In a small bowl or jar, whisk together the olive oil, fresh lemon juice, honey, Dijon mustard, and finely chopped basil. Add a pinch of salt and freshly ground black pepper to taste. Allow the dressing to sit while you prepare the salad to enhance flavors.
  2. Combine the Fruits and Vegetables: In a large mixing bowl, gently combine the fresh blueberries, diced peaches, and sliced English cucumber cut into half-moons. Handle the fruit carefully to avoid crushing.
  3. Toss with Dressing: Drizzle the basil-lemon vinaigrette over the combined fruit and cucumber. Toss the salad gently to coat evenly while preserving the integrity of the fruit pieces.
  4. Add Feta and Garnish: Sprinkle crumbled feta cheese over the top of the salad, then garnish with extra fresh basil leaves if desired. Serve the salad immediately for the best texture, or chill briefly before serving to meld the flavors.

Notes

  • Use fresh, ripe peaches and blueberries for the best flavor and texture.
  • Gently toss the salad to prevent the fruit from breaking down and becoming mushy.
  • Chilling the salad for 10–15 minutes before serving allows flavors to blend but avoid long refrigeration to keep fruit fresh.
  • Substitute feta with goat cheese for a creamier texture if preferred.
  • This salad is excellent as a light lunch, a healthy snack, or a colorful side dish for grilled meats.
