Deliciously soft and flaky blueberry biscuits with a hint of sweetness, baked to golden perfection and topped with a luscious honey butter glaze. Perfect for breakfast, brunch, or a delightful snack.

Ingredients

Biscuits

  • 11 tablespoons unsalted butter, cold and divided
  • 3 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ¼ teaspoons fine sea salt
  • 1 ½ cups fresh blueberries
  • 1 ⅔ cups cold buttermilk

Honey Butter

  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 400°F. Place 1 tablespoon of butter in an 8×8-inch baking pan and heat in the oven for 3-5 minutes until melted. Use a brush to coat the bottom and sides of the pan with the melted butter. Set aside.
  2. Prep Butter: Cut the remaining 10 tablespoons of cold butter into small pieces and keep them cold until ready to use.
  3. Mix Dry Ingredients and Incorporate Butter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add the cold butter pieces into the flour mixture and use your fingertips to gently press and smash the butter into irregular flat pieces, ensuring a crumbly texture.
  4. Add Blueberries and Buttermilk: Toss the fresh blueberries into the flour and butter mixture. Gently stir in the cold buttermilk until the dough comes together with no streaks of dry flour.
  5. Transfer Dough to Pan: Spread the dough evenly into the prepared baking pan using a spatula, making sure to reach the corners.
  6. Score Dough: Lightly spray a bench scraper with nonstick cooking spray and score the dough into 9 equal squares without separating them, to make cutting easier after baking.
  7. Bake Biscuits: Bake for 40-45 minutes until the tops are golden brown and a paring knife inserted in the center comes out clean. Let the biscuits cool in the pan for 5 minutes.
  8. Prepare Honey Butter: In a small microwave-safe bowl, combine 2 tablespoons butter, honey, and a pinch of salt. Microwave for 30-60 seconds until melted and stir well to combine.
  9. Finish and Serve: After the biscuits have cooled for 5 minutes, turn them out onto a baking sheet and then flip them onto a wire rack so tops are facing up. Brush the tops generously with honey butter. Cool for an additional 10 minutes before cutting along the scored lines with a serrated knife. Serve warm.

Notes

  • Keep butter cold to ensure flaky biscuit layers.
  • Use fresh blueberries for best texture and flavor, frozen berries may add excess moisture.
  • Do not separate the biscuits before baking to help them rise properly.
  • Use a serrated knife for clean cuts without squashing the biscuits.
  • Honey butter can be adjusted to taste by adding more or less honey.
