Ingredients

Sweet Potato Mixture

  • 4 pounds sweet potatoes (baked)
  • ½ cup butter
  • ¼ cup light brown sugar
  • 22 ½ teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Topping

  • ¾ cup chopped pecans
  • 3 cups mini marshmallows

Instructions

  1. Bake Sweet Potatoes: Preheat the oven to 450°F. Place the whole sweet potatoes on a baking sheet and bake for about 1 hour or until very fork tender. You can bake these up to 3 days ahead, then refrigerate until ready to use.
  2. Reduce Oven Temperature: After the sweet potatoes are baked, reduce the oven temperature to 350°F for the final baking step.
  3. Prepare Sweet Potato Mash: Peel the skins off the hot sweet potatoes and place the flesh in a large mixing bowl. Add butter, brown sugar, salt, cinnamon, and vanilla extract. Using an electric mixer, beat the mixture until smooth and creamy.
  4. Assemble in Baking Dish: Transfer the mashed sweet potatoes to a 9×13 inch baking dish, spreading them evenly in a smooth layer.
  5. Add Toppings: Sprinkle chopped pecans evenly over the sweet potato layer, then evenly distribute the mini marshmallows on top of the pecans.
  6. Bake to Golden Perfection: Bake the casserole at 350°F for 20-25 minutes or until the marshmallows are golden brown, puffed up, and the topping is nicely toasted. Serve warm.
