This classic 5-inch Vanilla Sponge Bento Cake recipe yields a light and fluffy vanilla-flavored sponge perfect for layering and decorating. With simple ingredients and straightforward steps, it is ideal for creating personalized mini celebration cakes or bento desserts.

Ingredients

Ingredients

  • 100 g flora buttery/margarine (softened, taken out of the fridge for around an hour before using)
  • 100 g caster sugar
  • 1/2 tsp vanilla extract
  • 2 large eggs
  • 100 g self-raising flour

Instructions

  1. Preheat Oven: Preheat your oven to 160°C for a fan oven, 180°C for a non-fan oven, or gas mark 4.
  2. Prepare Cake Tins: Line two 5-inch cake tins. Grease the tins with butter and sprinkle with flour, or alternatively use greaseproof paper to prevent sticking.
  3. Cream Butter and Sugar: In a mixing bowl, cream the softened butter and caster sugar together thoroughly using a hand mixer until the mixture turns lighter in color and is fluffy.
  4. Add Eggs and Vanilla: Gradually add the eggs and vanilla extract into the creamed mixture. If the mixture starts to curdle, you may add a small amount of flour to stabilize, but this is usually not necessary.
  5. Fold in Flour: Once all eggs are incorporated, gently fold in the self-raising flour using a spatula, ensuring to scrape down the sides of the bowl to combine all ingredients evenly without overmixing.
  6. Divide Batter: Pour the batter evenly into the prepared cake tins. For an even bake, use a weighing scale to split the batter equally between the tins.
  7. Smooth Batter: Make a small dip in the center of the batter in each tin to prevent the cakes from doming excessively while baking.
  8. Bake the Cakes: Place the tins in the preheated oven and bake for approximately 25 minutes. The cakes are done when a skewer inserted comes out clean.
  9. Cool in Tins: Let the cakes cool in their tins for about 10 minutes before carefully removing them onto a cooling rack.
  10. Final Cooling and Storage: Allow the cakes to cool completely. Once cooled, wrap them tightly in cling film to keep fresh until you are ready to level, fill, and decorate.

Notes

  • Ensure the butter is softened to room temperature for easier creaming.
  • Use a scale to evenly distribute batter for uniform cake layers.
  • Be careful not to overmix after adding flour to keep the sponge light and airy.
  • Allow cakes to cool completely before wrapping to avoid condensation and sogginess.
  • This sponge is perfect for creating personalized bento cakes or small celebration cakes with your favorite fillings and frostings.
