This Beefy Enchilada Tortellini recipe combines the comforting flavors of classic enchiladas with tender cheese-filled tortellini for a quick and satisfying meal. Ground beef simmers with spices, enchilada sauce, salsa, and corn, then melds with melted cheese and creamy sour cream, all tossed with pasta for a hearty dish perfect for busy weeknights.

Ingredients

Main Ingredients

  • 12 oz cheese filled tortellini (refrigerated, frozen or dried)
  • 1 lb ground beef (lean)
  • 1 cup onion (diced)
  • 1 tsp chili powder
  • 1 tsp garlic salt
  • 1 tsp cumin
  • ½ tsp dried oregano
  • 10 oz enchilada sauce
  • 1 cup salsa
  • 15 oz canned corn (drained)
  • 1½ cups Mexican 3 cheese blend (shredded)
  • ⅓ cup sour cream
  • 2 tbsp freshly chopped cilantro (optional)

Instructions

  1. Cook Tortellini: Bring a large pot of water to boil and cook the cheese-filled tortellini following package instructions until al dente. Drain well and set aside.
  2. Brown Beef and Onion: While tortellini cooks, heat a large skillet over medium-high heat. Add ground beef and diced onion, cooking until beef is browned and broken into crumbles and the onion is translucent. Drain excess fat.
  3. Simmer with Spices and Sauces: Return the skillet to the stovetop. Stir in chili powder, garlic salt, cumin, dried oregano, enchilada sauce, salsa, and drained corn. Bring the mixture to a gentle simmer, allowing flavors to meld.
  4. Add Cheese and Sour Cream: Stir shredded Mexican cheese blend and sour cream into the beef mixture until the sauce becomes creamy and cheese is melted completely.
  5. Combine Tortellini: Add the cooked and drained tortellini to the skillet. Stir gently to coat the pasta fully with the cheesy, flavorful beef sauce.
  6. Garnish and Serve: Optionally sprinkle freshly chopped cilantro over the top for a fresh herbal note. Serve warm and enjoy this hearty, flavorful dish.

Notes

  • Using fresh or frozen tortellini works well; adjust cooking time accordingly.
  • For a spicier dish, add a pinch of cayenne or use a hot salsa.
  • Drain the beef grease thoroughly to keep the dish from becoming too oily.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently on the stovetop or in the microwave.
  • To make this dish vegetarian, substitute the beef with plant-based ground meat or beans.
