These Banana Oatmeal Bars are a wholesome and delicious snack or breakfast option, combining the natural sweetness of ripe bananas with hearty rolled oats and rich chocolate chips. Easy to prepare and bake, these bars are perfect for a nourishing on-the-go treat or a quick energy boost throughout the day.

Ingredients

Banana Mixture

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • ½ teaspoon salt

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup chocolate chips

Instructions

  1. Preheat and Prepare Pan: Heat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper to ensure easy removal of the bars later.
  2. Mix Ingredients: In a large mixing bowl, combine the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt. Stir well until all ingredients are evenly incorporated.
  3. Transfer and Flatten: Pour the mixture into the prepared baking pan and use a spatula to flatten it into an even layer. Optionally, sprinkle additional chocolate chips on top for extra chocolatey goodness.
  4. Bake: Place the pan in the oven and bake for 18 to 20 minutes, or until the edges turn golden brown and the bars appear set.
  5. Cool and Cut: Allow the bars to cool completely in the pan before cutting them into 16 bars to ensure they hold their shape.

Notes

  • You can substitute the nut butter with almond, peanut, or cashew butter based on your preference.
  • For a dairy-free option, ensure the chocolate chips are vegan-friendly.
  • Store the bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars freeze well; wrap individually and store in a freezer-safe container for up to 2 months.
  • Use ripe bananas for best natural sweetness and moistness in the bars.
