  • 3 very ripe bananas (1 ½ cups mashed)
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with a 9-inch wide strip of parchment paper, folded to cover the bottom and long edges, then grease or spray the pan and parchment for easy release.
  2. Mash Bananas: In a bowl, thoroughly mash the ripe bananas until you have 1 ½ cups of mashed banana for the batter.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour (or gluten-free mix), quick oats, light brown sugar, apple pie spice, salt, baking powder, and baking soda. Stir together until well mixed.
  4. Add Wet Ingredients: To the dry mixture, add the mashed bananas, melted butter, eggs, milk, and vanilla extract. Stir until the batter is smooth and all ingredients are fully incorporated.
  5. Transfer and Bake: Pour or scoop the batter evenly into the prepared loaf pan. Optionally, sprinkle extra oats on top for texture. Bake in the preheated oven for 45-60 minutes, or until a toothpick inserted deeply in the center comes out clean.
