These Banana Oat Baked Donuts are a wholesome and delicious treat perfect for breakfast or a snack. Made with ripe bananas, oats, and a touch of maple syrup, they offer a naturally sweet, moist, and fluffy texture without deep frying. Baked to golden perfection, these donuts are healthier alternatives to traditional fried donuts and can be customized with dye-free sprinkles for a fun twist.

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup oats (rolled or quick oats)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt

Wet Ingredients

  • 1 large ripe banana
  • 1 large egg
  • 1/3 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or coconut oil
  • 1/4 cup maple syrup

Toppings

  • Dye-free sprinkles (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a donut pan to prevent sticking.
  2. Mash and Combine Wet Ingredients: In a medium bowl, mash the ripe banana until smooth. Whisk in the egg, milk, vanilla extract, melted butter or coconut oil, and maple syrup until the mixture is well blended.
  3. Add Dry Ingredients: To the same bowl, add the all-purpose flour, oats, baking powder, baking soda, cinnamon, and a pinch of salt. Mix gently until just combined; the batter should be thick but still pourable. If using toppings like sprinkles, fold them in at this stage.
  4. Fill Donut Pan: Using a piping bag or a resealable plastic bag with the tip cut off, pipe the batter into the prepared donut pan molds, filling each about two-thirds full to allow room for rising.
  5. Bake: Bake in the preheated oven for 12-15 minutes or until the donuts turn golden brown and a toothpick inserted in the center comes out clean.
  6. Cool: Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  7. Storage: Store the donuts in an airtight container at room temperature for up to 2 days, refrigerate for up to a week, or freeze for up to one month for extended freshness.

Notes

  • You can substitute all-purpose flour with whole wheat flour for a healthier alternative.
  • Use plant-based milk and coconut oil to make these donuts vegan.
  • Ensure the banana is ripe for optimal sweetness and moisture.
  • Avoid overmixing the batter to keep the donuts tender and light.
  • Add nuts or chocolate chips to the batter for additional texture and flavor.
  • Donuts can be lightly warmed before serving for a fresh-out-of-the-oven taste.
