Deliciously moist Banana Bread Brownies combining rich chocolate and sweet ripe bananas, swirled together to create a marbled treat perfect for dessert or a snack.

Ingredients

Dry Ingredients

  • ¾ cup (3¾ oz/105 g) all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 1 ½ cups (12 oz/340 g) granulated sugar
  • ½ cup (4 oz/115 g) butter, melted
  • 3 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 large very ripe bananas, about 10 oz/284 g, mashed

Chocolate Ingredients

  • ½ cup (2 oz/57 g) unsweetened cocoa powder
  • ½ cup (3 oz/85 g) chopped bittersweet chocolate

Instructions

  1. Prepare Pan and Oven: Preheat the oven to 350°F (180°C). Butter and line an 8×8 inch (20×20 cm) baking pan with parchment paper or foil and set aside.
  2. Mix Dry Ingredients: In a medium bowl, combine the all-purpose flour, baking powder, and salt. Stir together until evenly mixed.
  3. Mix Wet Ingredients: In a separate large bowl, whisk together granulated sugar, melted butter, eggs, and vanilla extract until smooth and well combined.
  4. Combine Wet and Dry: Gently fold the dry ingredients into the wet mixture until just combined, careful not to overmix.
  5. Divide Batter: Evenly divide the combined batter into two bowls.
  6. Prepare Chocolate Batter: Sift the unsweetened cocoa powder into the first bowl, then add the chopped bittersweet chocolate. Mix gently until just incorporated to create the chocolate brownie batter.
  7. Prepare Banana Batter: Add the mashed bananas into the second bowl and mix until fully combined for the banana bread batter.
  8. Layer Batters: Dollop the chocolate brownie batter into the prepared baking pan first, then spoon the banana batter over it.
  9. Swirl Batter: Use a butter knife to gently swirl the chocolate batter through the banana batter to create a beautiful marbled effect, avoiding overmixing.
  10. Bake: Place the pan in the preheated oven and bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out with a few moist crumbs.
  11. Cool: Remove the pan and let the banana bread brownies cool completely in the pan before cutting into 12 squares.
  12. Serve and Store: Enjoy these brownies with a cup of coffee. Store any leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 8 weeks.

Notes

  • Use very ripe bananas for the sweetest flavor and best texture.
  • Be careful not to overmix the batter to keep the brownies tender.
  • Ensure the brownies are cooled completely before slicing for clean cuts.
  • Can be stored at room temperature or frozen for longer shelf life.
