Ingredients

Dry Ingredients

  • 2 1/4 cups rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Wet Ingredients

  • ~1 cup mashed banana (about 2 large or 3 medium bananas)
  • 2 eggs
  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • 1/2 cup banana coins (sliced bananas)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with nonstick spray and optionally line the bottom with parchment paper to ensure easy removal.
  2. Mix Dry Ingredients: In a small bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir together to evenly distribute the spices and leavening.
  3. Mash Bananas: In a large bowl, mash the ripe bananas thoroughly until smooth and creamy, ensuring no large chunks remain.
  4. Whisk Wet Ingredients: Crack the eggs into the mashed bananas and whisk to combine. Then add the almond milk, maple syrup, and vanilla extract, stirring until the mixture is uniform.
  5. Combine Wet and Dry Mixtures: Pour the oat mixture into the wet ingredients bowl and stir gently but thoroughly to ensure everything is evenly mixed without overworking.
  6. Add Optional Ingredients: If desired, fold in chopped walnuts, chocolate chips, or sliced banana coins for added texture and flavor.
  7. Bake: Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 40–45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Cool and Serve: Remove from the oven and allow to cool before slicing. Enjoy warm for a comforting breakfast.
