Ingredients

Peaches

  • 6 ripe but firm peaches, halved and pitted (skin on)

Sauce

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ⅛ teaspoon ginger
  • Pinch of salt

For Serving

  • Vanilla ice cream (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to ensure it’s at the perfect temperature when you begin baking the peaches.
  2. Prepare the baking dish and sauce: In an 8×11-inch baking dish, whisk together the melted butter, honey, vanilla extract, cinnamon, ginger, and a pinch of salt until fully combined.
  3. Coat the peaches: Add the peach halves to the baking dish and gently turn them around to ensure they are evenly coated with the butter and spice mixture. Arrange the peaches cut side up and spoon some of the sauce into the crevices of each peach, packing them snugly in the dish.
  4. Bake covered: Cover the baking dish loosely with foil to keep moisture while allowing some air circulation, and bake for 20 minutes to start softening the peaches.
  5. Bake uncovered: Remove the foil and continue baking the peaches uncovered for another 10–15 minutes. This will caramelize the edges and make the peaches tender enough to easily pierce with a fork.
  6. Serve: Serve the baked peaches warm, topped with a scoop of vanilla ice cream if desired for a creamy contrast to the warm, spiced fruit.
