Ingredients

Tomato and Cheese Mixture

  • 2 ½ cups grape tomatoes, washed and dried
  • 1 (8 oz) brick of Feta cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 5 tablespoons olive oil
  • ¼ cup chopped fresh basil

Pasta

  • 12 oz bow tie pasta, cooked, drained, and kept warm

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the tomatoes and feta.
  2. Prepare Baking Dish: Place the washed and dried grape tomatoes into a medium-sized baking dish, creating a bed for the feta cheese.
  3. Add Feta Cheese: Place the 8 oz brick of feta cheese in the center of the tomatoes.
  4. Drizzle Olive Oil: Drizzle 3 tablespoons of olive oil evenly over the tomatoes and the feta cheese.
  5. Season: Sprinkle 1 teaspoon Italian seasoning and ½ teaspoon salt over the cheese and tomatoes for flavor.
  6. Additional Oil: Drizzle the remaining 2 tablespoons of olive oil over the feta cheese to enhance richness.
  7. Bake: Bake the mixture in the preheated oven for 30-35 minutes, until the tomatoes have burst and the feta is soft and creamy.
  8. Mix and Add Basil: Remove the dish from the oven and stir the softened feta and roasted tomatoes together until you have a creamy sauce. Add the chopped fresh basil and stir well.
  9. Combine with Pasta: Add the cooked and drained bow tie pasta to the tomato and feta mixture, stirring until everything is well combined and coated.
  10. Serve: Serve the baked feta pasta hot for a delicious, comforting meal.

Notes

  • Use grape or cherry tomatoes for the best burst of sweetness after roasting.
  • If you prefer a spicier version, add red pepper flakes before baking.
  • Fresh basil can be substituted with fresh parsley or oregano for a different flavor profile.
  • Ensure the pasta is warm to help the sauce coat it evenly.
  • For a gluten-free version, substitute bow tie pasta with gluten-free pasta.
