Ingredients

Vegetables and Herbs

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 1 cup baby spinach, chopped
  • Optional: chopped fresh basil or fresh chives for topping

Dairy

  • 8 ounces feta cheese
  • 4 large eggs

Oils and Seasonings

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking.
  2. Prepare vegetables and feta: If using individual ramekins, divide cherry tomatoes, diced bell pepper, diced red onion, minced garlic, and feta cheese evenly among 4 oven-safe dishes. Drizzle each with 1 tablespoon of olive oil. If using one large baking dish, combine tomatoes, bell pepper, onion, and garlic together and place feta cheese in the center, drizzling olive oil over all.
  3. Mix spices: In a small bowl, combine dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle this spice blend evenly over the feta and vegetables in the dishes.
  4. Bake vegetables and feta: Place ramekins on a baking sheet or put the large baking dish directly into the oven. Bake for 25 minutes until the tomatoes soften and feta softens.
  5. Combine spinach and mix: Remove dishes from oven. Stir the contents to evenly incorporate the baked feta with the vegetables. Add chopped baby spinach and stir until combined.
  6. Add eggs: Create a well in the center of each individual dish (or four wells in the large baking dish). Crack one egg into each well carefully.
  7. Bake eggs: Return the dishes to the oven and bake for an additional 10 minutes, or until eggs are cooked to desired doneness.
  8. Garnish and serve: Top with optional fresh basil or chives. Serve warm with crusty baguette, toast, or pita for dipping.

Notes

  • You can use ramekins for individual servings or one large baking dish for a family-style presentation.
  • Adjust red pepper flakes to your preferred level of spiciness or omit if you prefer a milder flavor.
  • Fresh spinach can be substituted with baby kale or Swiss chard if desired.
  • Serve immediately for best texture and flavor, especially to enjoy the runny yolks.
  • This dish pairs well with crusty bread to soak up the juices.
