Delicious and wholesome Baked Chocolate Oatmeal Bars perfect for a quick breakfast or a healthy snack. Made with rolled oats, cocoa powder, almond butter, and sweetened with pure maple syrup, these bars are rich, fudgy, and easy to prepare, offering a satisfying chocolatey treat with added fiber and protein.

Ingredients

Dry Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/3 cup chocolate chips (plus extra for topping)

Wet Ingredients

  • 1 cup milk of choice
  • 1/3 cup creamy almond butter
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when your batter is mixed.
  2. Mix wet ingredients: In a medium bowl, whisk together the almond butter, milk, maple syrup, egg, and vanilla extract until the mixture is smooth and fully combined.
  3. Add dry ingredients: To the wet mixture, add the rolled oats, cocoa powder, baking powder, and chocolate chips. Stir gently until all ingredients are evenly incorporated, forming a thick batter.
  4. Prepare baking pan: Line an 8 x 8 inch baking pan with parchment paper for easy removal. Pour the batter into the pan, spreading it evenly. Sprinkle additional chocolate chips on top for extra texture and flavor.
  5. Bake: Bake in the preheated oven for about 20 minutes, or until the top is firm to the touch. This indicates the bars are cooked through but still moist inside.
  6. Cool and slice: Remove from the oven and allow to cool completely in the pan. Once cooled, slice into 8 bars. Optionally, sprinkle flaky sea salt on top for a delightful contrast to the sweetness.
  7. Store: Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Serve warm for best texture and flavor experience.

Notes

  • Use any type of milk you prefer such as dairy, almond, soy, or oat milk.
  • For a vegan version, replace the egg with a flax or chia egg.
  • Add nuts or dried fruit for extra texture and nutrition.
  • Sprinkling flaky sea salt on top enhances the chocolate flavor beautifully.
  • Bars can also be frozen for up to 2 months; thaw before consuming.
