Ingredients

Avocado Sauce

  • 1/2 cup plain Greek yogurt (4 ounces, full-fat)
  • 2 small-medium avocados, roughly diced (225 grams)
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Salad

  • 4 packed cups shredded cooked chicken (1 pound)
  • 1/2 cup diced red onion (60 grams)
  • 1/3 packed cup fresh cilantro, roughly chopped

Instructions

  1. Make the avocado sauce: In a medium-large bowl, combine the Greek yogurt, diced avocado, lime juice, garlic powder, salt, and pepper. Mix or mash the ingredients well until blended. You can choose to keep the mixture chunky or smooth based on your preference.
  2. Make the chicken salad: Add the shredded chicken, diced red onion, and chopped cilantro to the avocado sauce bowl. Stir thoroughly to combine all ingredients evenly. Taste and adjust seasoning if necessary.
  3. Enjoy: Serve this avocado chicken salad in sandwiches, on top of salads, or enjoy it on its own as a delicious and nutritious meal option.

Notes

  • Use ripe avocados for the creamiest texture and best flavor.
  • For a lighter version, substitute full-fat Greek yogurt with low-fat or non-fat Greek yogurt.
  • Can be made ahead of time and refrigerated for up to 2 days; avocado sauce may darken slightly.
  • If desired, add a pinch of cayenne pepper or chopped jalapeño for a spicy kick.
  • Perfect for meal prep and easy weeknight lunches.
