Instructions

  1. Prepare Dates: Slice each date lengthwise and carefully remove the pit. Set the pitted dates aside on a plate for filling.
  2. Make the Coconut Filling: In a small mixing bowl, combine the softened coconut butter and shredded unsweetened coconut thoroughly. If the coconut butter is solid, warm it gently in the microwave until it reaches a creamy, icing-like texture suitable for stuffing.
  3. Stuff the Dates: Spoon about 1/2 tablespoon of the coconut mixture into the cavity of each pitted date. Gently press one roasted almond into the center of the coconut filling in each date to mimic the classic Almond Joy flavor.
  4. Melt Chocolate Coating: In a small saucepan over low heat, melt the dark chocolate chips and unrefined coconut oil together, stirring constantly to ensure a smooth, even consistency without burning.
  5. Dip Dates in Chocolate: Using a fork or dipping tool, carefully dip each stuffed date into the melted chocolate, ensuring full coverage. Place the coated dates on a parchment-lined tray or plate.
  6. Set the Chocolate: Transfer the chocolate-covered dates to the freezer for 10 minutes to allow the chocolate shell to harden properly.
