Almond Joy Stuffed Dates are a quick and delicious no-bake treat combining the natural sweetness of Medjool dates with a creamy coconut filling, rich melted chocolate, and crunchy almonds.   • 8 Medjool dates

Filling

  • ½ cup desiccated coconut
  • 1 tbsp maple syrup
  • 1 tbsp non-dairy milk (preferably coconut milk)

Coating and Topping

  • ¼ cup vegan chocolate chips or chocolate bar
  • 8 whole almonds

Instructions

  1. Prepare the Dates: If your Medjool dates still have pits, make a shallow slice lengthwise down the middle of each date, being careful not to cut all the way through. Remove the pits carefully and gently open each date to create space for the filling.
  2. Make the Coconut Filling: In a small bowl, mix together the desiccated coconut, maple syrup, and non-dairy milk until the mixture is moist and holds together when pressed. Adjust with extra maple syrup or milk if the mixture feels dry.
  3. Melt the Chocolate: Place the vegan chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  4. Assemble the Stuffed Dates: Spoon the coconut filling into the cavity of each date. Dip half of each stuffed date into the melted chocolate, then firmly press a whole almond on top.
  5. Set the Chocolate: Arrange the stuffed dates on a plate or tray and refrigerate for 10 to 15 minutes until the chocolate is fully set and firm. Serve chilled and enjoy your Almond Joy inspired snack!
