These Almond Flour Cookies are a delicious, gluten-free treat featuring the nutty flavor of blanched almond flour sweetened naturally with maple syrup. They are easy to prepare, baked until golden and crisp on the edges, perfect for a healthy snack or dessert.

Ingredients

Dry Ingredients

  • 2 cups almond flour (blanched almond flour)
  • 1/2 teaspoon baking powder

Wet Ingredients

  • 1/4 cup butter (or vegan butter, softened)
  • 3 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Optional

  • Chocolate chips (quantity as desired, folded in)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 180°C (350°F) and line a large baking sheet with parchment paper to prevent the cookies from sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the almond flour and baking powder thoroughly to ensure even leavening throughout the dough.
  3. Add Wet Ingredients and Combine: Add the softened butter, maple syrup, and vanilla extract to the dry mixture. Mix everything until fully combined into a consistent dough. If desired, fold in chocolate chips gently using a rubber spatula.
  4. Shape the Cookies: Form 6 large or 12 small dough balls depending on your preferred cookie size. Place them on the prepared baking sheet and gently press down to shape them into cookie rounds.
  5. Bake the Cookies: Bake the cookies in the preheated oven for 10–12 minutes, or until the edges start to turn golden brown, indicating they are perfectly baked.
  6. Cool the Cookies: Remove the baking sheet from the oven and leave the cookies to cool completely on the baking sheet before transferring or serving. This allows them to set and develop the best texture.
