Ingredients

Dough Ingredients

  • 1 cup water
  • 1/3 cup unsalted butter (cut into cubes)
  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract

Cinnamon Sugar Coating

  • 1/2 cup granulated sugar
  • 3/4 tsp ground cinnamon

Instructions

  1. Prepare Baking Sheet: Place a silicone baking mat on a baking sheet and spray it with oil spray to prevent sticking.
  2. Boil Ingredients: In a medium saucepan, combine water, butter, sugar, and salt. Bring the mixture to a boil over medium-high heat.
  3. Make Dough: Reduce heat to medium-low and add the flour all at once. Stir constantly with a rubber spatula until the dough forms a smooth ball and pulls away from the sides of the pan.
  4. Cool Dough: Remove the dough from heat and transfer it to a mixing bowl. Allow it to cool for 4 minutes to prevent eggs from cooking when added.
  5. Add Eggs and Vanilla: Mix in the eggs and vanilla extract using an electric hand mixer or stand mixer until the dough becomes smooth and gluey, like mashed potatoes. Use your hands to combine any lumps into a uniform ball.
  6. Pipe Churros: Transfer the dough into a large piping bag fitted with a star-shaped tip. Pipe 4-inch lengths onto the greased baking mat, cutting the dough with scissors after each churro.
  7. Chill Churros: Refrigerate the piped churros on the baking sheet for 1 hour to firm up the dough.
  8. Prepare for Air Frying: Carefully transfer the churros using a cookie spatula into the air fryer basket, spacing them about 1/2 inch apart. Spray the churros lightly with oil spray. Air fry in batches if necessary.
  9. Air Fry: Cook the churros in the air fryer at 375°F for 10-12 minutes, or until they are golden brown and crisp.
  10. Mix Cinnamon Sugar: While churros cook, combine granulated sugar and ground cinnamon in a shallow bowl.
