  2. Combine ingredients: Place 1/2 cup shredded coconut, cashews, honey, 1 tablespoon lemon juice, and all the lemon zest in a food processor. Process until the mixture becomes smooth and forms a dough-like consistency.
  3. Adjust texture: Check the dough texture. If it’s too sticky, add a little extra shredded coconut, almond flour, or protein powder to balance it. If it feels too dry, add more lemon juice or a splash of water to moisten.
  4. Form and coat balls: Place the remaining 3 tablespoons of shredded coconut in a shallow dish. Form the dough into balls approximately 1 to 1 ½ inches in diameter. Roll each ball in the shredded coconut until fully coated.
