This 30 Minute One Pot Cheesy Chicken Broccoli Rice Casserole is a quick, comforting, and flavorful dish that combines tender chicken, fluffy rice, fresh broccoli, and melted cheddar cheese all cooked together in one skillet. Ingredients

Protein and Vegetables

  • 2 chicken breasts (cut into small cubes)
  • 1 small onion (chopped)
  • 4 cloves garlic (minced)
  • 2 cups broccoli florets

Rice and Liquids

  • ¾ cup rice (uncooked)
  • 10 ounces cream of chicken soup (1 can)
  • 2 cups chicken broth (low sodium)

Seasoning and Other

  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cheddar cheese
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. Cook the onion and chicken. Heat the olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken breasts. Cook for about 5 minutes, stirring occasionally, until the chicken begins to brown and is no longer pink. Season with salt and black pepper to taste. Then, stir in the minced garlic and cook for an additional 30 seconds until the garlic becomes aromatic.
  2. Add the rice and liquids. To the skillet, add the uncooked rice, cream of chicken soup, and 2 cups of chicken broth. If needed, more broth can be added later to ensure the rice cooks fully.
  3. Cook the rice. Bring the mixture to a boil. Once boiling, reduce the heat to medium-low and cover the skillet. Simmer, stirring occasionally, for about 15 minutes or until the rice is fully cooked and tender. Taste and adjust seasoning as needed.
  4. Finish with broccoli and cheese. Stir in the broccoli florets and half of the cheddar cheese. Continue cooking covered for 2 more minutes, allowing the broccoli to soften slightly. Then, sprinkle the remaining cheese evenly over the top and place the skillet under the broiler for a couple of minutes until the cheese melts and starts to brown lightly.
  5. Garnish and serve. Remove from the oven, sprinkle fresh chopped parsley over the casserole, and serve warm for a hearty and delicious meal.
