This 20 Minute Matcha Chia Pudding is a quick, nutritious, and delicious breakfast option made with wholesome ingredients like chia seeds, matcha powder, and almond milk. It’s easy to prepare, requires no cooking, and can be customized with your favorite toppings such as fresh strawberries.

Ingredients

Chia Pudding

  • 1/3 cup chia seeds
  • 2 tsp matcha powder
  • 1 + 1/4 cup almond milk
  • 2 tsp maple syrup (or agave, honey, or date syrup)
  • 1 tsp vanilla extract

Toppings

  • Fresh strawberries

Instructions

  1. Mix chia and matcha: Start by mixing together the chia seeds and matcha powder with a whisk until there are little to no clumps left.
  2. Add liquids and whisk: Next, add in the almond milk, vanilla extract, and maple syrup, whisk for 1-2 minutes or until ingredients are well combined.
  3. Refrigerate: Cover the mixture and refrigerate for a minimum of 15 minutes to allow the chia seeds to absorb the liquid and thicken the pudding.
  4. Stir and serve: Mix well to break up any lumps, then top off with your favorite toppings like fresh strawberries before serving.

Notes

  • Chia pudding is best stored in an airtight container and enjoyed within 5-7 days.
  • If your pudding is lumpy in the end, simply take a spoon and break up the lumps.
