This quick and delicious 20-Minute Egg Roll Bowl captures all the classic flavors of an egg roll in a healthy, deconstructed stir-fry. Ground chicken, crunchy cole slaw, and scrambled eggs are sautéed together with garlic, ginger, and scallions, then flavored with hoisin and soy sauce for a mouthwatering, easy-to-make meal that’s perfect for busy weeknights.

Ingredients

Protein and Vegetables

  • 1 pound ground chicken
  • 1 (14-ounce) bag cole slaw
  • 4 scallions (thinly sliced, separate white and green parts)
  • 3 large cloves garlic (minced)
  • 1 tablespoon grated or minced fresh ginger
  • 3 large eggs (whisked)

Oils and Sauces

  • 2 tablespoons neutral oil (divided, such as canola or vegetable oil)
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1/2 teaspoon toasted sesame oil

Seasonings and Serving

  • Fine sea salt and freshly ground black pepper (to taste)
  • Furikake seasoning (or toasted sesame seeds, for garnish)
  • (Optional) rice or noodles, for serving

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken, season with fine sea salt and freshly ground black pepper, and cook until browned, breaking it up into small crumbles with a wooden spoon. Once cooked through, transfer the chicken to a clean bowl and set aside.
  2. Cook the Cole Slaw and Aromatics: In the same skillet, add the remaining 1 tablespoon of oil. Add the white parts of the sliced scallions, minced garlic, and grated ginger. Sauté for 1 minute, stirring constantly to release their flavors. Then add the cole slaw and cook for about 2 minutes, stirring occasionally, until it begins to soften and wilt slightly.
  3. Scramble the Eggs: Push the cole slaw mixture to one side of the pan. Pour the whisked eggs into the empty side of the skillet and cook, scrambling them by breaking into small pieces with a spatula until fully cooked.
  4. Combine All Ingredients: Return the cooked ground chicken to the skillet. Add the hoisin sauce, low-sodium soy sauce, toasted sesame oil, and the green parts of the scallions. Toss everything together until thoroughly combined and heated through. Taste and adjust the seasoning by adding more hoisin or soy sauce as desired.
