Ingredients

Tomato Sauce

  • 4 tomatoes, chopped (or 3 cups diced canned tomatoes or thawed frozen tomato sauce)
  • 1 tbsp olive oil (for sautéing)

Shrimp

  • 1 pound large shrimp, peeled and deveined

Seasonings and Garnish

  • 5 garlic cloves, minced
  • 2 tbsp olive oil (1 tbsp for finishing the dish)
  • Bunch of dill, chopped

Instructions

  1. Prepare the tomato sauce: Chop the tomatoes into small pieces and sauté them in a non-stick pan with 1 tablespoon of olive oil over medium heat. Cover the pan with a lid and cook until the tomatoes start boiling, approximately 4-5 minutes, allowing the tomatoes to soften and break down into a sauce consistency.
  2. Cook the shrimp: Add the peeled and deveined shrimp to the tomato sauce. Cook together for another 4-5 minutes, stirring occasionally, until the shrimp turn pink and are fully cooked through.
  3. Add garlic, dill, and olive oil: Stir in the minced garlic, chopped dill, and the remaining 1 tablespoon of olive oil. Cook for an additional minute to allow the flavors to combine without overcooking the garlic.

Notes

  • If your tomato sauce turns out too runny because the tomatoes haven’t cooked down enough, add 1 tablespoon of tomato paste to thicken it.
