A refreshing and easy-to-make summer dessert featuring mixed berries mashed into a sweet sauce and layered with whipped mascarpone cream, topped with bee pollen and toasted pistachios for added texture and flavor.

Ingredients

Berry Mixture

  • 2 cups mixed summer berries (blackberries, blueberries, raspberries, strawberries, and/or huckleberries)
  • 2 tablespoons honey (30 ml), or sugar to taste

Whipped Mascarpone

  • 2 recipes whipped mascarpone (enough to form firm peaks)

Toppings

  • A few pinches of bee pollen
  • A handful of chopped toasted pistachios or other nuts

Instructions

  1. Prepare the Berries: Rinse the mixed berries thoroughly and drain well to remove excess water. Place the berries in a medium-sized bowl, drizzle with 2 tablespoons of honey, and gently mash them into a chunky sauce. Chill the mixture for up to 10 minutes to prevent too much moisture release which can affect layering.
  2. Make Whipped Mascarpone: Whip the mascarpone until it forms firm peaks, ensuring it is stable enough to hold the layers above the juicy berry sauce without collapsing.
  3. Layer the Dessert: In 3 to 4 small serving glasses, layer the whipped mascarpone and berry sauce, starting and ending with the mascarpone. You may have extra mascarpone left. Cover and chill the layered fools for several hours if desired.
  4. Garnish and Serve: Just before serving, drizzle each fool with additional honey. Top with a generous pinch of bee pollen and a sprinkle of chopped toasted pistachios to add texture and enhance flavor.
