This Super Creamy Coleslaw Salad is a vibrant and refreshing side dish that combines crisp vegetables with a tangy, creamy yogurt-based dressing. A lighter, healthier twist on the traditional coleslaw, it’s perfect for barbecues, weeknight dinners, or holiday meals, offering a rich flavor and satisfying crunch that everyone will love.

Ingredients

For the Coleslaw:

  • 1/2 pointed cabbage, thinly sliced
  • 1/2 tsp salt
  • 1 carrot, julienned
  • 6 radishes, thinly sliced into rounds

For the Dressing:

  • 150 g Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp mustard
  • Juice of 1/2 lemon
  • 2 cloves garlic, minced
  • 1 tbsp agave syrup
  • 1/2 tsp black pepper
  • 1 tsp chili flakes
  • 2 tbsp fresh dill, chopped

Instructions

  1. Prepare the vegetables: Thinly slice the pointed cabbage into a large mixing bowl. Slice the radishes into thin rounds and julienne the carrot into thin strips to ensure all vegetables mix well and evenly in the salad.
  2. Soften the cabbage: Sprinkle the sliced cabbage with 1/2 teaspoon of salt and gently toss it. This step helps to soften the cabbage slightly and enhances its flavor by drawing out moisture.
  3. Make the dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, mustard, lemon juice, minced garlic, pepper, chili flakes, agave syrup, and chopped fresh dill until the dressing is smooth and well combined, offering a tangy and creamy flavor balance.
  4. Mix it all: Add the prepared radishes and carrot to the softened cabbage. Pour the creamy dressing over the vegetables and toss thoroughly until every piece is nicely coated with the dressing.
  5. Serve: Enjoy the coleslaw immediately for maximum crunch and freshness, or cover and refrigerate it for at least 30 minutes to allow the flavors to blend beautifully before serving.

Notes

  • For a spicier kick, increase the chili flakes or add a dash of hot sauce to the dressing.
  • You can substitute agave syrup with honey or maple syrup for a different sweetness profile.
  • Make the salad ahead of time but keep it chilled to maintain its crisp texture.
  • Use fresh dill for the best aromatic flavor; dried dill can be used but in lesser quantity.
  • This coleslaw pairs well with grilled meats, sandwiches, or as a refreshing side for any meal.
