Roasted Salsa is a flavorful homemade salsa made by roasting fresh vegetables, including beefsteak tomatoes, jalapeno peppers, red onion, and garlic, to bring out a smoky, rich taste with a mild kick. This easy appetizer is blended smooth with fresh cilantro and seasoned with kosher salt, perfect for dipping or topping your favorite dishes.

Ingredients

Vegetables

  • 4 large beefsteak tomatoes, cored and quartered
  • 2 large jalapeno peppers, stems removed
  • 1 large red onion, quartered and layers separated
  • 4 cloves garlic

Other Ingredients

  • ½ cup cilantro leaves
  • 2 teaspoons kosher salt

Instructions

  1. Preheat Oven: Preheat your oven to the broil setting and line a baking sheet with aluminum foil to prepare for roasting the vegetables.
  2. Prepare Vegetables: Arrange the quartered tomatoes, jalapenos, separated red onion layers, and whole garlic cloves evenly on the lined baking sheet.
  3. Broil First Side: Broil the vegetables for about 9 minutes until they begin to brown and blister.
  4. Flip and Broil Other Side: Carefully flip the vegetables over and continue broiling for an additional 10 to 15 minutes, or until the tomatoes and jalapenos develop a nice char and blister without burning.
  5. Process Ingredients: Transfer the roasted vegetables to a food processor, add the cilantro leaves and kosher salt, then blend until smooth to create the salsa.
  6. Cool and Serve: Allow the salsa to cool to room temperature before serving for the best flavor and texture.

Notes

  • Air Fryer Instructions: To roast the vegetables in an air fryer, place tomatoes, jalapenos, red onion, and garlic in the air fryer basket and spray lightly with cooking oil. Air fry at 375°F for 15 minutes until browned and blistered, then proceed with processing as usual.
  • Watch vegetables carefully during broiling to avoid burning.
