These Mini Meatloaves are a delicious, easy-to-make comfort food that cooks quickly in the oven. Made with lean ground beef or turkey, seasoned with a blend of spices and topped with a flavorful brown sugar-ketchup glaze, these individual meatloaves are perfect for meal prep or family dinners. The convenient muffin tin method ensures even portions and a tender, juicy result every time.

Ingredients

Meatloaf Mixture

  • 1 1/2 pounds lean ground beef or ground turkey (680 grams)
  • 2/3 cup panko bread crumbs or regular breadcrumbs (100 grams)
  • 1/2 cup chopped onion (70 grams)
  • 1 tablespoon barbecue sauce
  • 1 tablespoon mustard
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg, lightly beaten

Meatloaf Sauce

  • 1/3 cup light brown sugar (73 grams)
  • 1/2 cup ketchup (120 grams)
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the mini meatloaves.
  2. Prepare Meatloaf Sauce: In a small bowl, mix together the light brown sugar, ketchup, Dijon mustard, and ground nutmeg until well combined to create the flavorful glaze.
  3. Mix Meatloaf Ingredients: In a large mixing bowl, use your hands, a meat chopper, or a sturdy spoon to combine the ground beef (or turkey), panko breadcrumbs, chopped onion, barbecue sauce, mustard, chili powder, garlic powder, salt, pepper, and beaten egg. Mix thoroughly to incorporate all ingredients evenly.
  4. Form Mini Meatloaves: Evenly divide the meat mixture into 12 cups of a muffin tin. Press the mixture down firmly in each cup to shape individual mini meatloaves.
  5. Bake Initial Meatloaves: Place the muffin tin in the preheated oven and bake for 15 minutes. This initial bake will cook the meatloaves partially.
  6. Drain Excess Grease: Carefully remove the muffin tin from the oven and use a paper towel to soak up any grease that has formed on the surface of the meatloaves to ensure they stay moist but not greasy.
  7. Add Sauce and Continue Baking: Generously spoon the prepared meatloaf sauce over each mini meatloaf. Return the muffin tin to the oven and bake for an additional 10 to 15 minutes, or until the meatloaves are fully cooked and the internal temperature reaches 160°F (71°C) for beef or 165°F (74°C) for turkey.
  8. Serve: Remove from the oven and serve warm, ideally with mashed potatoes or your choice of side dishes, along with any remaining meatloaf sauce.
