  • 3 tbsp. extra-virgin olive oil
  • 4 (6- to 8-oz.) boneless, skinless chicken breasts, cut into 1” strips
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne
  • 1/4 tsp. paprika

Toppings and Serving

  • 8 corn tortillas, warmed
  • Sour cream
  • Thinly sliced red onion
  • Finely chopped tomatoes
  • Shredded Monterey Jack cheese
  • Finely chopped avocados
  • Finely chopped fresh cilantro
  • Lime wedges

Instructions

  1. Heat the oil and cook chicken: In a large skillet over medium heat, heat the extra-virgin olive oil. Season the chicken strips generously with kosher salt and freshly ground black pepper. Add them to the skillet and cook, stirring occasionally, until the chicken is golden brown and cooked through, about 6 minutes.
  2. Season the chicken: Sprinkle chili powder, ground cumin, garlic powder, cayenne, and paprika over the chicken. Continue cooking and stirring the mixture for about 1 more minute, allowing the spices to coat the chicken evenly. Add more oil if the mixture seems dry to prevent sticking.
