Instructions

  1. Combine Ingredients: Add the frozen blueberries, sugar, and water to a medium 2-quart saucepan. Stir gently to combine all the ingredients evenly before heating.
  2. Simmer: Bring the mixture to a boil over medium heat, then reduce the heat to a simmer. Continue to simmer for 10 minutes, stirring often to prevent the mixture from burning and to help break down the blueberries.
  3. Thicken the Syrup: In a small bowl, whisk the fresh lemon juice into the cornstarch using a fork until it dissolves completely. Stir this mixture into the simmering saucepan. Cook for an additional 30 seconds to 1 minute, or until the syrup has thickened to your desired consistency.
  4. Strain the Syrup: Remove the saucepan from heat and allow it to cool for 5 minutes. Pour the blueberry mixture through a fine mesh sieve into a glass bowl, gently pressing on the berries with a spoon to extract as much syrup as possible without pulverizing the fruit.
  5. Serve and Store: Serve your blueberry syrup warm or cool. Allow it to cool completely before transferring leftovers to a jar or airtight container. Store in the refrigerator for up to 10 days or freeze for up to two months. When ready to use frozen syrup, thaw overnight in the refrigerator.
