Instructions

  1. Prepare Jalapeños: Trim the stems from the jalapeños and discard them. Slice each jalapeño into ¼ inch thick slices. Use gloved hands while handling to avoid irritation from the jalapeño oils.
  2. Combine Syrup Ingredients: In a stockpot or saucepan, combine apple cider vinegar, granulated sugar, minced garlic, smoked paprika, and celery seed.
  3. Dissolve Sugar: Place the pot over medium-high heat and bring the mixture to a boil, stirring frequently. Continue cooking for about 3 minutes until the sugar is fully dissolved.
  4. Simmer Jalapeños: Add the jalapeño slices to the boiling mixture and simmer for 4-5 minutes, until the jalapeños shrink slightly and change from a vibrant green to a dull green color.
  5. Jar the Jalapeños: Using a slotted spoon, remove the jalapeño slices from the liquid and transfer them into sterilized canning jars.
  6. Reduce Syrup: Return the liquid to the stove and continue simmering for an additional 5-7 minutes, allowing it to reduce and thicken slightly into a syrupy consistency.
  7. Fill Jars with Syrup: Ladle the thickened syrup over the jalapeño slices in the jars. Press down gently to ensure the jalapeños are fully submerged. Fill each jar with syrup, leaving about ½ inch of space from the top.
  8. Seal the Jars: Seal the jars tightly with lids to preserve the candied jalapeños. Let the jars cool before storing.
