Ingredients

Vegetables

  • 1 jalapeno, seeded and finely diced
  • 2 tablespoons yellow onion, finely diced
  • 1 tablespoon red pepper, finely diced

  • 1 tablespoon butter (preferably salted)
  • 1 cup half and half
  • 1 lb. American cheese (high quality, cut into smaller squares for melting)

  • ¼ cup Pico De Gallo
  • ¼ cup cilantro, roughly chopped

Instructions

  1. Prepare vegetables: Seed and finely dice the jalapeno, finely dice the yellow onion and red pepper.
  2. Sauté vegetables: In a skillet over medium heat, melt 1 tablespoon of butter, then add the diced jalapeno, onion, and red pepper. Sauté for about 5 minutes until softened. Remove from heat and set aside.
  3. Heat half and half: In a skillet or double boiler over medium heat, add the cup of half and half and warm gently.
  4. Melt cheese: Gradually add the American cheese squares to the warmed half and half, stirring continuously as they melt to achieve a smooth, even consistency.
  5. Combine vegetables and cheese: Once the cheese mixture is fully melted and smooth, stir in the sautéed vegetables. Remove from heat.
  6. Garnish and serve: Transfer the queso dip to a serving bowl or mini warmer, garnish with pico de gallo and chopped cilantro. Serve warm with tortilla chips.
