Ingredients

Meat and Vegetable Mixture

  • 6 sprays Non Stick Cooking Spray
  • 1 lb 98% Fat Free Ground Turkey
  • 3/4 cup Chopped Onion
  • 3/4 cup Chopped Celery
  • 3/4 cup Chopped Green Pepper
  • 1 tbsp Chili Powder
  • 1/2 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 1/8 tsp Cayenne Pepper
  • 28 oz Crushed Tomatoes
  • 1/4 cup Sugar Free Ketchup
  • 1 tbsp Dijon Mustard
  • 2 tsp Dried Basil
  • 1 cup Frozen Corn Kernels
  • 2/3 cup Fat Free Shredded Mozzarella Cheese

Biscuit Topping

  • 1 cup No Fat Plain Greek Yogurt
  • 1 cup Self Rising Flour
  • 1 Egg (beaten, for brushing)
  • 2 tsp Everything Seasoning

Instructions

  1. Cook the Turkey: Spray a large skillet with non-stick cooking spray and add the ground turkey. Cook over medium heat until the turkey is almost completely cooked through, breaking it into small pieces as it cooks.
  2. Add Vegetables: Add the chopped onion, celery, and green pepper to the turkey in the skillet. Continue cooking, stirring occasionally, until the vegetables are soft and tender.
  3. Season the Mixture: Sprinkle chili powder, salt, ground black pepper, and cayenne pepper over the turkey and vegetables. Stir thoroughly to combine all the spices evenly.
  4. Add Tomato Mixture and Simmer: Reduce the heat to low, then stir in the crushed tomatoes, sugar-free ketchup, and Dijon mustard. Mix well and let the sauce simmer for about 15 minutes or until the tomato liquid has reduced and thickened slightly.
  5. Incorporate Corn, Cheese, and Basil: Once the tomato mixture is reduced, stir in the frozen corn kernels, fat-free mozzarella cheese, and dried basil. Mix well and remove the skillet from heat.
  6. Transfer to Baking Dish: Spray a rectangular baking dish with non-stick cooking spray and pour the meat and vegetable mixture evenly into the dish.
  7. Prepare Biscuit Dough: In a medium bowl, combine the no fat plain Greek yogurt and self-rising flour. Mix together until you form a sticky dough.
  8. Shape Biscuit Topping: Turn the dough out onto a generously floured surface. Roll or spread it out to about 1/4 inch thickness. Cut into 8 equal-sized pieces using a knife or biscuit cutter.
  9. Add Biscuit Pieces to Casserole: Using floured fingers, place the biscuit pieces evenly over the top of the meat mixture in the baking dish. Brush the biscuit tops with the beaten egg and sprinkle with the everything seasoning.
  10. Bake: Preheat the oven to 375°F (190°C). Bake the casserole for 20 to 25 minutes, or until the biscuit topping is lightly browned and cooked through.
