  • 1/2 cup nut or seed butter (such as almond or cashew butter)
  • 1 cup vegan dark chocolate chips, melted
  • 1 tbsp coconut oil

Instructions

  1. Prepare Ingredients: Drain and rinse one 13.5 oz can of chickpeas thoroughly to remove excess liquid. Melt 1 cup of vegan dark chocolate chips either in the microwave in short bursts or on the stovetop using a double boiler until smooth.
  2. Blend Ingredients: Add the drained chickpeas, 1/2 cup of your chosen nut or seed butter, and the melted dark chocolate chips into a food processor or blender. Blend for about 45-60 seconds until the mixture is smooth and well combined.
  3. Form and Freeze Truffles: Using a cookie scoop, portion out the mixture onto a parchment paper-lined baking sheet. Place the sheet in the freezer for 15-20 minutes to allow the balls to harden slightly. Remove and shape each scoop into a smooth ball, then return them to the freezer for another 10 minutes to firm up.
  4. Dip in Chocolate: Melt an additional 1 cup of vegan dark chocolate chips with 1 tablespoon of coconut oil for dipping. Remove the truffles from the freezer and coat them thoroughly in the melted chocolate. Place the coated truffles back onto a parchment-lined baking sheet.
  5. Add Toppings and Final Freeze: Optionally sprinkle your desired toppings such as cacao nibs, goji berries, sprinkles, shredded coconut, nuts, seeds, or freeze dried fruits over the chocolate-covered truffles. Return the baking sheet to the freezer and allow the truffles to harden completely.
  6. Store and Serve: Once fully set, remove the truffles from the freezer and store them in the refrigerator. These truffles are best enjoyed within 7-10 days when refrigerated or can be kept frozen for 30-60 days.
